Salad For Breakfast?

Look what Erin came up with - a scrumptious breakfast salad! Yup, a little bit of arugula leaves, soft boiled eggs and a slice of toasted bread. I would never think of eating a salad for breakfast, you? But I must admit, just looking at this bowl of goodness I want to wake up super early tomorrow morning just so I can have enough time to really enjoy it with a cuppa of freshly brewed coffee on my balcony. The little things:)
